Sainfoin honey has a pleasant, delicate aroma and flavor. It is used as a general tonic and restorative. The honey contains high levels of ascorbic acid, carotene, protein, and various enzymes. Its color ranges from 0 mm to 17 mm. Its consistency ranges from fine-grained to coarse-grained. Crystallization occurs 1–2 months after extraction.
